Westport Winery has selected North Beach Progressive Animal Welfare Society (PAWS) to benefit from their latest wine, True North, a white Merlot. The name, True North, is the Roberts family’s metaphor for true love, something they always get from their pets. The label features their beloved St. Bernard, Koko (the Interior Salish word for dog), who passed away the week they purchased the land for the vineyard in 2007. Donations from the sale this wine will be made in Koko’s memory.
PAWS President Lorna Valdez has been patiently awaiting this wine’s release to assist the organization in their mission of рsaving the lives of homeless or unwanted domestic animalsс. North Beach PAWS is a no kill animal shelter that fosters animals waiting for permanent adoptive homes. The organization also promotes pet spaying and neutering. This is the third pet care and adoption organization selected by Westport Winery. Coastal Animal Rescue and Adoption (CARA) receives funds from the sale of Ancient Marinerуs Pear Wine. The Harbor Association of Volunteers for Animals (HAVA) receives monies from the sale of Jetty Cat Red.
The first tasting of True North will occur at Seabrook Cafe on Saturday, April 18 at 6pm. Westport’s winemaker, Dana Roberts, has teamed up with Seabrookуs chef, Rob Butler, to create an extraordinary culinary evening featuring five courses of Italian cuisine paired with Westportуs wines. The menu begins with Broccolini alla Romana, Bucatini Arrabiata, roasted halibut paired with True North, Osso Buco, and finishes with Zabaglione. Those who cannot attend the dinner may enjoy their first taste of True North at the winery on Sunday, April 19 beginning at 11am.

Seabrook Cafe Winemakerуs Dinner Menu
First Course: Broccolini alla Romana with garlic vinaigrette and shaved parmesan reggiano served with Bordello Blonde, a blend of primarily dry Gewurztraminer accented by a fruit forward Riesling. This wine is said to go with anything and anyone as it benefits Aberdeen Museum of History.
Second Course: Bucatini Arrabiata spicy pasta hoses with garlic, tomato and basil
paired with Elk River Riesling. The wine is offers a flavor profile of refreshing honey and spring blossoms, complimented with green apple and pear for a slightly mineral finish.
This wine benefits the Twin Harbors Chapter of the Rocky Mountain Elk Foundation (RMEF). The RMEF is also hosting its annual banquet in Ocean Shores on April 18.
Third Course: Roasted halibut with green Sicilian olives, garlic, capers, lemon and parsley paired with True North. This is an unusually layered and complex white Merlot that explodes with hazelnut and smokiness accented with a slight sweetness. This new release benefits North Beach PAWS.
Fourth Course: Osso Buco, braised veal shank, red wine jus, and risotto Milanese is paired with Westportуs bold, Boom Runner Reserve Merlot. Aged in new American oak barrels, the aging integrates well with the primary spice and berry fruit characteristics, accented by soft, smooth tannins. This wine benefits the Polson Museum in Hoquiam.
Final Course: Zabaglione is a whipped egg custard served over fresh berries and paired with Maritime Muscat. This delight exhibits flavors of banana on the nose, with honey, tropical fruit sweetness, and subtle spice on the palate. This wine benefits the Northwest Carriage Museum in Raymond.
